Love Mexican? Love Your Slow Cooker!

307_4808135When you have five kids, fast food isn’t really fast and it can be a prohibitively expensive excursion. So how to avoid the false allure of fast food on the nights when standing in the kitchen and cooking isn’t an option? Enter the slow cooker.

My kids’ favorite eat out dinner spot is Chipotle. I have to agree that they have some pretty delicious dinner options. How can you go wrong with a veggie burrito bowl or a couple of soft corn tacos? Add some guacamole and chips and I am in heaven. If you (and your kids) love Mexican as much as we do, you don’t need to dole out the bucks or hang out at your stove to have an easy Mexican meal, just dust off your slow cooker. If you need some inspiration for easy, weeknight dinner options, check out these five delicious Mexican slow cooker recipes below…

Best Slow Cooker Carnitas … Somer from A Spicy Perspective adds orange juice and ancho chile powder to her pork in this set it and forget it recipe. After she cooks her pulled pork, she puts it under the broiler for a couple of minutes to crisp it up. Genius! I can’t wait to try that tip.

Slow Cooker Mexican Quinoa … Yes. Quinoa! And butternut squash. This one-dish recipe from Chelsea’s Messy Apron cooks on high for just 3 or 4 hours. Quinoa is a great grain alternative for those who are eating gluten-free or paleo or perfect for anyone looking to change up your usual ingredient rotation.

Slow Cooker Charro Beans … Pinto beans are the perfect side dish for any Mexican meal or, if you are like me, you could just eat them all. by. themselves. If you have never cooked dry beans before, this is your chance. Beans are such an easy and economical food – and always a kid-favorite over here.

Slow Cooker Enchilada Stack … I love enchiladas but I once Jackson-Pollacked my kitchen by letting my kids help in the preparation. Red enchilada sauce, yellow walls – not a pretty sight. Damn Delicious has made it oh-so-easy to enjoy creamy enchiladas with none of the work. No rolling, no splattering the walls, just stacking.

Crockpot Chicken Tortilla Soup … Mama, it’s cold outside. Soup is the answer. This crockpot chicken tortilla soup recipe from Table for Two is just perfect for these chilly, rainy, almost-snowy days.

Taco Tuesday is right around the corner – what Mexican slow cooker recipe will you try first?
